Cocoa Bean Grading Explained: What S1, S2, and S2B Mean

Cocoa bean grading looks intimidating on a spec sheet, but it comes down to two simple things: how many defective beans are in the batch, and how many beans it takes to make up 100 grams.

What the Numbers Measure

Grading is based primarily on bean count per 100 grams and the percentage of defective beans (moldy, insect-damaged, slaty, or germinated beans mixed into the batch). Fewer beans per 100g generally means larger, more developed beans, and a lower defect percentage means a cleaner batch that requires less sorting on your end.

Reading the Common Grade Labels

  • S1, the tightest specification: lower bean count (larger beans) and the lowest defect tolerance. The grade most chocolate manufacturers request when bean size consistency affects their roasting process.
  • S2, a step down in bean size consistency and a slightly higher allowable defect percentage, still well within export-quality standards for most confectionery and industrial chocolate use.
  • S2B, a further step down, generally accepted where cocoa beans are processed into cocoa mass, butter, or powder rather than used whole, since bean size uniformity matters less once beans are ground.

Why This Matters for Your Order

f you’re running a craft or small-batch chocolate operation where roast consistency depends on bean size, paying for S1 is worth it. If your beans are going straight into industrial processing for cocoa butter or powder, S2B often delivers the same end result at a better price point.

A Question Worth Asking

Always ask for the specific defect percentage and moisture content of the batch, not just the grade label,  the underlying lab numbers are what actually matter for your process.
